Welcome to May! The month where we celebrate our mamas! I will keep this blog short and sweet so I can get back into the kitchen and prepare a meal for my own mama.
Let us not forget that we have a long weekend…technically our second one of the year… but realistically it is our first one of the year! The one where we really fire up the BBQ’s and show off those grilling skills.
Let me share my all-time favourite recipe that I love to make for my family. This is what you will need to make this dish.
- Portabello mushrooms “Ports”
- Spinach
- Arugula
- Parmigiano Reggiano
- Prosciutto
- Balsamic Vinegar
- Olive Oil
- Garlic
- Thyme
- Salt
- Pepper
- Any other spices that you love to use with mushrooms I encourage you to use.
I do not measure ingredients so trust yourselves when you cook and, most importantly, HAVE FUN!
Put your ports on a cookie sheet and drizzle olive oil making sure they are happily covered on both sides. Remove port stems. Make sure you have the ports gills up and sprinkle salt and pepper to taste. Add your garlic (chopped, minced and/or crushed) and thyme on the mushrooms and place them in your BBQ, preheated to 350 degrees. Close BBQ. Now this is the fun part… let them sizzle and marry with all those yummy ingredients.
In the meantime, grab your clean spinach and arugula and put them in a large mixing bowl. In a small bowl pour about 2 tablespoons(ish) of olive oil, about 1 tablespoon(ish) of balsamic vinegar and sprinkle some salt and pepper, throw in a couple cloves of crushed garlic, and whisk well together. This concoction will be the dressing.
Cover the greens with the dressing when you know the mushrooms are almost done. Also shred some Parmigiano Reggiano cheese onto the greens
Once the ports are finished BBQing, they will look softer and will shrink while they were marrying with the ingredients. Remove them from the cookie sheet and place one cap in the middle of your plate, place the greens directly on top of the mushroom cap followed by a slice of prosciutto and some Parmigiano Reggiano…. Look at that! You are ready to enjoy the yummy meal!
